NUTRITION
I fixed a nutrient-rich, exquisitely tasting meal, in
20 minutes. I swear! It happened in my own kitchen!
I surprised even myself. I am not a gourmet cook by any
means. But when this meal presented itself, in 20
minutes, so that I could eat and then get to a board
meeting, I decided that I needed to share, not so much
what I made, but how it’s done.
Many of you have made an intention, this year, to eat
healthier. Why? This is the only body you have this
lifetime and it absolutely is your temple. It
houses your mind, your spirit and soon perhaps, it will
host new life. The food that fuels your body will
nourish your little visitor. Behave now as if… Feed your
body what you would feed your growing child.
Before the “how” of nutritious, exquisite cooking,
permit yourself to consider this a CULINARY ADVENTURE!
Not a chore. It’s a great way to unwind after a day at
the office. Put on some comfy clothes, your favorite
music. Make a little spritzer of seltzer and lime. Your
sweety can cut up a few vegetables while you’re
gathering the goods. And talk about your day. Forget
about watching the news. It’s all been the same lately.
See if you can be open to experimenting and using your
imagination.
You know the basics of a smart wardrobe, right? A few
skirts, tops, blouses, scarves, mix and match and you’ve
got 16 outfits or so. So what’s in your kitchen
cabinets? If you stock your cabinets with a few basics,
you can mix veggies to match your appetite. Here are
some ideas for basics:
Dry
goods:
Brown rice
Quinoa
Lentils
Oats
Amaranth
Beans (canned)
Tomatoes (canned)
Cooking Oils:
Olive Oil
Canola or Safflower Oil
Corn, safflower, sunflower, soy and canola oils all have
higher smoke points than olive oil for frying
Spices:
Turmeric
Red Pepper
Bragg’s Amino Liquid
Salt/Pepper (fresh cracked)
Cumin
These items have a pretty long shelf life. If you’ve got
these at home, then you can stop and get some fresh
vegetables and you’re good to go.
Veggies:
Onion
Garlic
Green / Red Pepper
Squash
Zucchini
Asparagus
Spinach
Collard Greens
Kale
Celery
Mushrooms
The idea is to find some basics that you really
like. These lists are FAR from exhaustive. For a really

It’s
a really smart, informative website. They’re featuring
5-minute collard greens this week. Yum!
This was
my 20 minute, nutritious, exquisite meal: I put the brown
rice on first (with a cube of vegetable bouillon). Then stir
fried onions, garlic and celery. Added red pepper flakes,
canned, diced tomatoes and black beans. I tossed all that in
with the brown rice when it was done. I had some Trader
Joe’s frozen Mahi Mahi in my freezer, so I put that in a
skillet in some olive oil and tossed some ginger marinade
I’d gotten at Costco , squeezed half a lime on top with
fresh cracked pepper. That’s it! It was soooooooooooo good!

above. Make a grocery list of things you like. And nourish
your body and spirit with tasty, healthy food. If not now,

and Selected Poems, Volume One. I couldn’t resist. It must
be shared.
The Ponds
Every year the lilies are so perfect I can hardly believe
Their lapped light crowding the black, mid-summer ponds.
Nobody could count all of them –
The muskrats swimming among the pads and the grasses can
reach out their muscular arms and touch
Only so many, they are that rife and wild. But what in this
world is perfect?
I bend closer and see how this one is clearly lopsided –
And that one wears an orange blight –
And this one is a glossy cheek half nibbled away –
And that one is a slumped purse full of its own unstoppable
decay.
Still, what I want in my life is to be willing to be dazzled
–
To cast aside the weight of facts
And maybe even to float a little above this difficult world.
I want to believe that the imperfections are nothing –
That the light is everything – that it is more than the sum
Of each flawed blossom rising and fading. And I do.
